    Ingredients

    • 1/4 cup toasted sesame seeds
    • 2 tablespoons soy sauce
    • 1 tablespoon sugar
    • Salt to taste

    Steps:

    1. Blanch the spinach in boiling water for 1 minute, then immediately transfer to ice water to stop the cooking process.
    2. Squeeze out excess water from the spinach and then cut into bite-sized pieces.
    3. Grind the toasted sesame seeds in a mortar and pestle or spice grinder until finely ground.
    4. In a bowl, mix the ground sesame seeds, soy sauce, sugar, and salt to taste.
    5. Toss the spinach in the sesame dressing until well coated.
