    Recipe Description

    A heartwarming and aromatic traditional Colombian soup made vegan, featuring a rich blend of potatoes, corn, and guascas herb to capture the essence of comfort food.

    Ingredients

    • 6 cups of vegetable broth
    • 2 cups of water
    • 2 ears of corn, cut into halves
    • 1 cup of guascas (dried or fresh)
    • Salt and pepper to taste
    • 1 avocado, sliced
    • 1/4 cup of capers
    • 1/4 cup of soy cream

    Steps:

    1. In a large pot, combine the vegetable broth, water, potatoes, and corn. Bring to a boil.
    2. Reduce heat and simmer for about 30 minutes or until potatoes are tender.
    3. Add guascas, salt, and pepper. Cook for an additional 10 minutes.
    4. Serve hot, garnished with avocado slices, capers, and a drizzle of soy cream.
