A creamy and sweet start to the day, this vegan Jamaican Plantain Porridge is made with ripe plantains, coconut milk, and spices, blended to perfection. It’s a comforting and nutritious breakfast that brings a taste of the Caribbean to your table.

Ingredients

  • 2 ripe plantains
  • 4 cups coconut milk
  • 1/2 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • Pinch of salt

Steps:

  1. Peel and chop the plantains.
  2. In a blender, combine plantains, coconut milk, oats, flaxseed, cinnamon, nutmeg, vanilla, and salt. Blend until smooth.
  3. Pour the mixture into a large saucepan and cook over medium heat, stirring constantly to prevent sticking.
  4. When the porridge begins to bubble, reduce heat to low and simmer for 10 minutes, stirring frequently.
  5. Stir in maple syrup and cook for another 5 minutes.
