Ingredients
- 2 ripe plantains
- 4 cups coconut milk
- 1/2 cup rolled oats
- 1/4 cup ground flaxseed
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 2 tablespoons maple syrup
- Pinch of salt
Steps:
- Peel and chop the plantains.
- In a blender, combine plantains, coconut milk, oats, flaxseed, cinnamon, nutmeg, vanilla, and salt. Blend until smooth.
- Pour the mixture into a large saucepan and cook over medium heat, stirring constantly to prevent sticking.
- When the porridge begins to bubble, reduce heat to low and simmer for 10 minutes, stirring frequently.
- Stir in maple syrup and cook for another 5 minutes.
