    Recipe Description

Kısır is a delightful Turkish salad that is known for its savory, tangy, and slightly spicy flavor profile. This classic vegan version embraces the richness of fine bulgur wheat, an array of fresh vegetables, and the profound flavors of pomegranate molasses and olive oil, making it a refreshing and nutritious dish. The preparation is incredibly straightforward, requiring only the mixing of bulgur with boiling water to soften and the subsequent incorporation of finely chopped vegetables and seasonings. Kısır serves beautifully as an appetizer, a side dish, or a light meal, offering a vegan option that is both fulfilling and aligned with a healthy dietary preference. Its versatility and ease of preparation have made it a beloved dish not only in Turkey but around the world among those who appreciate the nuances of Mediterranean cuisine.

    Ingredients

    • 1 cup boiling water
    • 1 tomato, finely chopped
    • 1 cucumber, finely chopped
    • 4 scallions, chopped
    • 1/2 cup flat-leaf parsley, chopped
    • 1/4 cup fresh mint, chopped
    • 3 tablespoons olive oil
    • 2 tablespoons pomegranate molasses
    • Juice of 1 lemon

    Steps:

    1. Pour boiling water over bulgur in a bowl. Cover and let it sit for about 20 minutes until the water is absorbed and bulgur is soft.
    2. Add chopped tomato, cucumber, scallions, parsley, and mint to the softened bulgur.
    3. In a separate small bowl, whisk together olive oil, pomegranate molasses, lemon juice, salt, pepper, paprika, and cumin.
    4. Pour the dressing over the bulgur and vegetable mixture; mix well.
    5. Adjust seasonings to taste and serve immediately or let it chill in the refrigerator for an hour before serving to enhance the flavors.
