Crafted with care, these lamingtons offer a moist, delicate crumb, thanks to the innovative use of vegan alternatives for common dairy ingredients.     Ingredients

    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1 cup non-dairy milk
    • 1/3 cup vegetable oil
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 cups desiccated coconut
    • For the chocolate glaze: 2 cups powdered sugar, sifted
    • 1/2 cup cocoa powder, sifted
    • 1/2 cup water
    • 1 teaspoon vanilla extract

    Steps:

    1. 1. Preheat oven to 350°F (180°C) and line a square baking pan with parchment paper.
    2. 2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
    3. 3. In another bowl, mix the non-dairy milk, vegetable oil, apple cider vinegar, and vanilla.
    4. 4. Combine wet and dry ingredients until smooth.
    5. 5. Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
    6. 7. For the glaze, whisk together powdered sugar, cocoa powder, water, and vanilla in a bowl until smooth.
    7. 8. Dip each cake square into the chocolate glaze, ensuring all sides are covered, then roll in desiccated coconut.
    8. 9. Place on a wire rack to set before serving.
