Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1 1/2 cups dry green lentils, rinsed
- 6 cups vegetable broth
- 1 tablespoon tomato paste
- Salt and pepper to taste
- Juice of 1/2 lemon
- Fresh parsley for garnish
Steps:
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Add carrots and celery, cook for 5 minutes.
- Stir in cumin, curry powder, thyme, and bay leaf, cook for 1 minute.
- Add lentils, vegetable broth, and tomato paste. Bring to a boil, then reduce heat and simmer for about 30 to 35 minutes or until lentils are tender.
- Serve hot, garnished with fresh parsley.
