Ingredients
- 4 cups vegetable broth
- 2 cups water
- 2 tbsp soy sauce
- 1 tbsp miso paste
- 200g ramen noodles
- 1 cup sliced mushrooms
- 1/2 cup corn
- 2 scallions, chopped
- 1 tbsp sesame oil
- 1 tsp ginger, minced
- 2 garlic cloves, minced
Steps:
- In a large pot, heat the sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
- Add the vegetable broth, water, soy sauce, and miso paste, stirring until well combined. Bring to a simmer.
- Add the noodles and cook according to package instructions.
- In a separate pan, sauté the mushrooms until tender.
- Divide the cooked noodles into bowls, top with broth, sautéed mushrooms, corn, and scallions. Serve hot.
