    Our Classic Vegan Stuffed Grape Leaves are a meticulous combination of tender grape leaves wrapped around a flavorful blend of rice, fresh herbs, and spices. This dish, rooted in Mediterranean tradition, offers a plant-based twist to an age-old recipe, ensuring that everyone can enjoy its rich, savory notes without compromise. Each grape leaf is carefully rolled to encase the aromatic filling, offering a delightful texture contrast that is both satisfying and light. Cooked slowly to perfection, these stuffed grape leaves emerge from the kitchen fragrant, with a tender bite, ready to be savored as an appetizer, side, or light meal. Whether served on their own, with a side of tangy lemon sauce, or alongside other Mediterranean favorites, they promise a culinary journey that respects tradition while embracing modern dietary preferences.

    Ingredients

    • 2 cups cooked rice
    • 1/4 cup olive oil
    • 1 large onion, finely chopped
    • 1/4 cup fresh dill, chopped
    • 1/4 cup fresh parsley, chopped
    • 2 tablespoons dried mint
    • Juice of 2 lemons
    • Salt and black pepper to taste

    Steps:

    1. Rinse the grape leaves in cold water and set aside.
    2. In a bowl, mix cooked rice with olive oil, onions, dill, parsley, dried mint, and half the lemon juice. Season with salt and pepper.
    3. Take a grape leaf, place it shiny side down, and add a small amount of the rice mixture at the base. Fold in the sides and roll tightly.
    4. Place the stuffed leaves seam side down in a pot.
    5. Once all are in the pot, pour over the remaining lemon juice and enough water to cover. Place a plate on top to hold them down.
    6. Allow to cool in the pot before serving.
    7. Serve with extra lemon slices.
