Ingredients
- 1 jar grape leaves in brine (about 50 leaves)
- 2 cups cooked rice
- 1/4 cup olive oil
- 1 large onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons dried mint
- Juice of 2 lemons
- Salt and black pepper to taste
Steps:
- Rinse the grape leaves in cold water and set aside.
- In a bowl, mix cooked rice with olive oil, onions, dill, parsley, dried mint, and half the lemon juice. Season with salt and pepper.
- Take a grape leaf, place it shiny side down, and add a small amount of the rice mixture at the base. Fold in the sides and roll tightly.
- Place the stuffed leaves seam side down in a pot.
- Once all are in the pot, pour over the remaining lemon juice and enough water to cover. Place a plate on top to hold them down.
- Allow to cool in the pot before serving.
- Serve with extra lemon slices.
