Recipe Description
A delightful, traditional sweet potato pie with a twist – completely vegan! Enjoy the creamy, sweet filling nestled in a crispy crust.
Ingredients
- 1/4 cup maple syrup
- 1/4 cup coconut milk
- 2 tbsp coconut oil, melted
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp salt
- 1 vegan pie crust
Steps:
- Preheat oven to 350°F (175°C).
- Boil sweet potatoes whole until soft, about 45 minutes. Let cool, then peel and mash.
- In a large bowl, combine mashed sweet potatoes, maple syrup, coconut milk, coconut oil, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
- Pour the filling into the vegan pie crust.
- Bake for 55-60 minutes, or until the pie filling is set.
