Ingredients
- 1 cup coconut milk
- 1/4 cup chia seeds
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 mango, diced
- Shredded coconut, for garnish
Steps:
- In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, and vanilla extract. Stir well until the mixture is fully combined.
- Cover the bowl and refrigerate for at least 4 hours, or overnight, until the chia seeds have absorbed the liquid and the mixture has a pudding-like consistency.
