    Indulge in the tropical flavors of our Coconut and Mango Chia Pudding. This refreshing and healthy dessert combines creamy coconut milk with chia seeds to create a luscious, tapioca-like texture. Topped with sweet, juicy mango slices and a sprinkle of toasted coconut flakes, each spoonful offers a taste of paradise. Perfect for breakfast, a snack, or dessert, this pudding is both nourishing and satisfying.

    Ingredients

    • 1 cup coconut milk
    • 1/4 cup chia seeds
    • 2 tablespoons maple syrup
    • 1 teaspoon vanilla extract
    • 1 mango, diced
    • Shredded coconut, for garnish

    Steps:

    1. In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, and vanilla extract. Stir well until the mixture is fully combined.
    2. Cover the bowl and refrigerate for at least 4 hours, or overnight, until the chia seeds have absorbed the liquid and the mixture has a pudding-like consistency.
    3. Remove the pudding from the refrigerator and give it a good stir to break up any clumps.
    4. Layer the chia pudding with diced mango in serving glasses or bowls.
    5. Garnish with shredded coconut and serve immediately or keep refrigerated until ready to serve.
