Ingredients
- 1/4 cup vegan mayonnaise
- 1 celery stalk, finely chopped
- 1 carrot, grated
- 2 tbsp red onion, finely chopped
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Salt and pepper to taste
- 4 whole grain bread slices
- Lettuce leaves
