Recipe Description

A refreshing and creamy carrot salad that’s perfect for the warmer seasons. This dairy-free and vegan version of the traditional Icelandic Gulrótarsalat will be a hit at your next gathering. Packed with nourishing ingredients, it’s an ideal side dish that comes together in minutes.

Ingredients

  • 4 cups grated carrots
  • 1/4 cup raisins
  • 1/2 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons maple syrup
  • 1/4 cup crushed walnuts (optional)
  • Salt and pepper to taste

Steps:

  1. In a large bowl, combine the grated carrots and raisins.
  2. In a small bowl, whisk together the vegan mayonnaise, apple cider vinegar, and maple syrup until smooth.
  3. Pour the dressing over the carrot and raisin mixture. Add crushed walnuts if using. Toss until well coated.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together.
