Ingredients
- 1/4 cup raisins
- 1/2 cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
- 2 tablespoons maple syrup
- 1/4 cup crushed walnuts (optional)
- Salt and pepper to taste
Steps:
- In a large bowl, combine the grated carrots and raisins.
- In a small bowl, whisk together the vegan mayonnaise, apple cider vinegar, and maple syrup until smooth.
- Pour the dressing over the carrot and raisin mixture. Add crushed walnuts if using. Toss until well coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together.
