    Ingredients

    • 1 tablespoon olive oil
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 3 cups vegetable broth
    • 1 cup coconut milk
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • Fresh basil for garnish

    Steps:

    1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
    2. Stir in the toasted pine nuts and cook for an additional 2 minutes.
    3. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld.
