These luxurious vegan meatballs are a blend of wild mushrooms, lentils, and walnuts, giving them a hearty and umami-rich flavor. Perfect for impressing guests or treating yourself to a high-end vegan experience.

Ingredients

  • 200g wild mushrooms
  • 1 cup cooked lentils
  • 1/2 cup walnuts, toasted
  • 2 tablespoons soy sauce
  • 1/2 teaspoon smoked paprika
  • 1 garlic clove
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil for frying

Steps:

  1. Finely chop the mushrooms and garlic.
  2. In a pan, sauté mushrooms and garlic in olive oil until tender.
  3. In a food processor, combine sautéed mushrooms, lentils, walnuts, soy sauce, smoked paprika, salt, and pepper. Pulse until well combined but not pureed.
  4. Transfer to a bowl, mix in breadcrumbs, and form into meatballs.
  5. Heat olive oil in a pan and fry meatballs until golden on all sides.
