Ingredients
- 1 cup cooked lentils
- 1/2 cup walnuts, toasted
- 2 tablespoons soy sauce
- 1/2 teaspoon smoked paprika
- 1 garlic clove
- 1/4 cup breadcrumbs
- Salt and pepper to taste
- Olive oil for frying
Steps:
- Finely chop the mushrooms and garlic.
- In a pan, sauté mushrooms and garlic in olive oil until tender.
- In a food processor, combine sautéed mushrooms, lentils, walnuts, soy sauce, smoked paprika, salt, and pepper. Pulse until well combined but not pureed.
- Transfer to a bowl, mix in breadcrumbs, and form into meatballs.
- Heat olive oil in a pan and fry meatballs until golden on all sides.
