The cauliflower steaks are roasted to perfection, yielding a slightly charred and crispy exterior while maintaining a tender interior. This vegan-friendly meal offers a flavorful medley that is both satisfying and nutritious, making it a delightful addition to your dining table. Enjoy each bite as the robust flavors intertwine harmoniously to provide a memorable culinary experience.

    Ingredients

    • 2 tablespoons harissa paste
    • 3 tablespoons olive oil
    • Salt to taste
    • Black pepper to taste
    • 1 garlic clove, minced
    • 1/4 cup tahini
    • 2 tablespoons lemon juice
    • Water as needed
    • Fresh parsley for garnish

    Steps:

    1. Preheat oven to 425°F (220°C).
    2. Remove the leaves and trim the base of the cauliflower, but keep the core intact.
    3. Slice the cauliflower into thick steaks, about 1 inch each.
    4. Mix harissa paste with 2 tablespoons of olive oil. Brush mixture over both sides of the cauliflower steaks.
    5. Season with salt and black pepper.
    6. Roast in the oven for 20-25 minutes, flipping halfway through, until tender and slightly charred.
    7. Meanwhile, prepare the garlic sauce by whisking together minced garlic, tahini, lemon juice, and remaining olive oil. Add water to thin to desired consistency.
    8. Season the sauce with salt to taste.
    9. Serve the cauliflower steaks hot, drizzled with garlic sauce and garnished with fresh parsley.
