Recipe Description

A warming and satisfying traditional stew made entirely from plant-based ingredients. Perfect for those chilly nights!

Ingredients

  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups frozen lima beans
  • 2 cups frozen corn kernels
  • 3 large potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup pulled jackfruit
  • 2 tablespoons barbecue sauce

Steps:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add lima beans, corn, potatoes, diced tomatoes, and vegetable broth. Bring to a boil.
  4. Reduce heat to simmer. Add apple cider vinegar, smoked papoda, dried thyme, salt, and pepper.
  5. Cover and simmer for 45 minutes, or until potatoes are tender.
  6. Serve hot and enjoy your vegan Brunswick Stew.
