Recipe Description
A comforting and robust vegan twist on the classic French Onion Soup. Caramelized onions simmered in a rich and flavorful broth, topped with vegan cheese and a slice of toasted crusty bread. Perfect for warming up during the chilly seasons.
Ingredients
- 4 large onions, thinly sliced
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1/2 cup dry white wine
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 slices of crusty bread
- 1 cup grated vegan cheese
Steps:
- In a large pot, heat the olive oil over medium heat.
- Add the onions and a pinch of salt, cook until caramelized, about 25-30 minutes, stirring frequently.
- Add garlic and cook for another minute.
- Pour in the white wine and deglaze the pot, scraping up any browned bits.
- Add the vegetable broth, bay leaf, and thyme. Bring to a simmer and cook for 15 minutes.
- Preheat the oven broiler.
- Ladle the soup into oven-safe bowls. Place a slice of bread on top of each, then sprinkle with vegan cheese.
- Broil until the cheese is melted and bubbly.
- Serve hot.
