Recipe Description

A comforting and robust vegan twist on the classic French Onion Soup. Caramelized onions simmered in a rich and flavorful broth, topped with vegan cheese and a slice of toasted crusty bread. Perfect for warming up during the chilly seasons.

Ingredients

  • 4 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1/2 cup dry white wine
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 slices of crusty bread
  • 1 cup grated vegan cheese

Steps:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and a pinch of salt, cook until caramelized, about 25-30 minutes, stirring frequently.
  3. Add garlic and cook for another minute.
  4. Pour in the white wine and deglaze the pot, scraping up any browned bits.
  5. Add the vegetable broth, bay leaf, and thyme. Bring to a simmer and cook for 15 minutes.
  6. Preheat the oven broiler.
  7. Ladle the soup into oven-safe bowls. Place a slice of bread on top of each, then sprinkle with vegan cheese.
  8. Broil until the cheese is melted and bubbly.
  9. Serve hot.
