Ingredients

  • 1 cup walnuts, finely ground
  • 1 cup canned chickpeas, rinsed and mashed
  • 1/2 cup breadcrumbs (use gluten-free if desired)
  • 2 tablespoons nutritional yeast
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, for frying
  • 12 ounces spaghetti (gluten-free if needed)
  • 2 cups marinara sauce, homemade or store-bought
  • 1 teaspoon olive oil
  • Fresh basil, for garnish
  • Vegan Parmesan cheese, for serving (optional)

Steps:

  1. In a large bowl, combine ground walnuts, mashed chickpeas, breadcrumbs, nutritional yeast, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Mix until well combined. Form the mixture into small balls, about the size of a tablespoon each.
