- 1 1/2 cups water
- 1 teaspoon salt
- 1 cup vegan refried beans
- 1/2 cup chopped lettuce
- 1/2 cup salsa
- 1/4 cup vegan cheese (optional)
- 1 tablespoon vegetable oil
Steps:
- In a mixing bowl, combine masa harina, water, and salt to form a dough.
- Divide the dough into 8 equal portions and shape each into a ball.
- Press each ball into a thick disk shape using your hands.
- Heat oil in a pan over medium-high heat and cook each sope for about 2-3 minutes on each side, until golden brown.
- Spread vegan refried beans on top of each sope, followed by lettuce, salsa, and vegan cheese if using.
