    Recipe Description

This Moroccan Spiced Quinoa recipe is a splendid fusion of nutty quinoa grains with the rich, warm flavors of Moroccan cuisine. It’s meticulously crafted to bring a vegan delight that resonates with the essence of Moroccan spices such as cumin, coriander, and cinnamon, all of which are known for their health benefits and flavor profiles. The inclusion of ingredients like raisins and almonds adds a delightful contrast of textures and sweetness, making this dish not only a pleasure for the palate but also a nutritional powerhouse. Designed for those who appreciate the finesse of spice-infused dishes, this recipe promises to be a wholesome addition to your culinary repertoire, embodying the essence of Moroccan hospitality and warmth.

    Ingredients

    • 2 cups water
    • 1 tsp olive oil
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tsp ground cumin
    • 1/2 tsp ground coriander
    • 1/4 tsp ground cinnamon
    • 1/3 cup raisins
    • 1/4 cup chopped almonds

    Steps:

    1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then cover, reduce heat, and simmer for 15 minutes or until water is absorbed.
    2. While the quinoa is cooking, heat olive oil in a separate pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
    3. Stir in the cumin, coriander, and cinnamon, and cook for another minute until fragrant.
    4. Add the cooked quinoa to the spice mixture. Include the raisins and chopped almonds, and stir well to combine. Season with salt and pepper to taste.
    5. Serve the quinoa garnished with fresh cilantro.
