Perfect as a standalone main course or as a complement to your favorite grain, this ratatouille is a testament to the simplicity and beauty of plant-based cooking.

    Ingredients

    • 2 tablespoons olive oil
    • 1 large onion, finely chopped
    • 3 garlic cloves, minced
    • 1 small eggplant, cubed
    • 2 zucchinis, cubed
    • 1 red bell pepper, chopped
    • 1 yellow bell pepper, chopped
    • 2 large tomatoes, diced
    • 1 tablespoon tomato paste
    • 1 teaspoon fresh thyme, chopped
    • 1 teaspoon fresh rosemary, chopped
    • Salt and pepper to taste
    • Fresh basil leaves, for garnish

    Steps:

    1. Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté until soft.
    2. Add eggplant, zucchinis, and bell peppers. Cook for about 10 minutes, stirring occasionally.
    3. Stir in the tomatoes, tomato paste, thyme, rosemary, salt, and pepper. Cover and simmer for 20 minutes, or until vegetables are tender.
    4. Adjust seasoning to taste. Garnish with fresh basil leaves before serving.
