Ingredients
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 small eggplant, cubed
- 2 zucchinis, cubed
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 large tomatoes, diced
- 1 tablespoon tomato paste
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- Salt and pepper to taste

Steps:
- Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté until soft.
- Add eggplant, zucchinis, and bell peppers. Cook for about 10 minutes, stirring occasionally.
- Stir in the tomatoes, tomato paste, thyme, rosemary, salt, and pepper. Cover and simmer for 20 minutes, or until vegetables are tender.
- Adjust seasoning to taste. Garnish with fresh basil leaves before serving.
