  • 2 cups cooked black-eyed peas
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 jalapeno, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Steps:

  1. In a large bowl, combine the black-eyed peas, cucumber, bell pepper, red onion, jalapeno, and cilantro.
  2. Drizzle with olive oil and lime juice. Toss to combine.
  3. Season with salt and pepper to taste.
