Recipe Description
A refreshing and spicy salad with black-eyed peas, perfect for New Year’s celebrations or summery lunches.
Ingredients
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 jalapeno, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- Juice of 1 lime
- Salt and pepper to taste
Steps:
- In a large bowl, combine the black-eyed peas, cucumber, bell pepper, red onion, jalapeno, and cilantro.
- Drizzle with olive oil and lime juice. Toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
