Recipe Description
This Vegan Blueberry Breakfast Bowl is a combination of all my favorites. The creamy smoothie base is made up of 5 simple ingredients β banana, blueberries, almond milk, dates, and peanut butter. Then topped it with my homemade GF Vegan Crunchy Chocolate Granola, which I shared in my last post β seriously so yummy! Along with fresh blueberries, strawberries, creamy peanut butter and vegan chocolate.
Ingredients
- 1/2 cup frozen strawberries
- 1/2 cup frozen blueberries
- 1 cup almond milk (or any plant-based milk)
- 1 tablespoon peanut butter, plus more for topping
- 1 teaspoon flaxseed meal (optional)
- 1/4 cup fresh strawberries
- 1/4 cup fresh blueberries
- 1/2 cup granola (use gluten-free if needed)
- A drizzle of peanut butter
Steps:
- Blend the Smoothie: In a blender, combine the frozen banana, frozen strawberries, frozen blueberries, almond milk, 1 tablespoon of peanut butter, and flaxseed meal (if using). Blend on high until smooth and creamy. Adjust the consistency by adding more almond milk if necessary.
- Assemble the Bowl: Pour the smoothie mixture into two bowls. Use the back of a spoon to smooth the top.
- Add the Toppings: Arrange the fresh strawberry slices and blueberries on top of the smoothie base. Sprinkle granola over the berries. Drizzle peanut butter generously over the top. If desired, add chia seeds, hemp seeds, or coconut flakes for an extra nutritional boost.
- Serve Immediately: Enjoy your Berry Bliss Granola Smoothie Bowl right away for the best texture and flavor. Itβs a delightful way to savor the freshness of the season, packed with antioxidants, fiber, and protein to fuel your day.
