    Ingredients

    • 1 cup pumpkin puree
    • 1 tsp salt
    • 1/2 cup water
    • 2 tbsp olive oil

    Steps:

    1. Combine flour, pumpkin puree, salt, and water to form a dough.
    2. Rest the dough for 40 minutes.
    3. Transfer dough through spätzle maker into simmering water.
    4. Cook until noodles rise to surface, then drain and roast briefly in olive oil.
