Recipe Description
Skewers of marinated tofu and vegetables, grilled until perfectly smoky and served with a savory-sweet reduction sauce.
Ingredients
- 1 large bell pepper
- 2 medium-sized zucchinis
- 200g king oyster mushrooms
- For the marinade:
- 4 tablespoons soy sauce
- 2 tablespoons mirin
- 1 tablespoon sake
- 1 tablespoon sugar
- 1 clove garlic, minced
Steps:
- Cut tofu, bell pepper, and zucchinis into bite-sized pieces.
- Slice king oyster mushrooms into similar sizes for uniform cooking.
- Skewer the tofu, bell pepper, zucchini, and mushrooms onto bamboo skewers.
- Prepare the marinade by mixing soy sauce, mirion, sake, sugar, garlic, and ginger in a bowl.
- Brush the skewers with the marinade and let them marinate for at least 30 minutes.
- Grill the skewers, turning occasionally and basting with more marinade, until the vegetables are tender and slightly charred, about 10 minutes.
- Serve hot with extra marinade sauce for dipping.
