Recipe Description

Skewers of marinated tofu and vegetables, grilled until perfectly smoky and served with a savory-sweet reduction sauce.

Ingredients

  • 200g firm tofu
  • 1 large bell pepper
  • 2 medium-sized zucchinis
  • 200g king oyster mushrooms
  • For the marinade:
  • 4 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sake
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

Steps:

  1. Cut tofu, bell pepper, and zucchinis into bite-sized pieces.
  2. Slice king oyster mushrooms into similar sizes for uniform cooking.
  3. Skewer the tofu, bell pepper, zucchini, and mushrooms onto bamboo skewers.
  4. Prepare the marinade by mixing soy sauce, mirion, sake, sugar, garlic, and ginger in a bowl.
  5. Brush the skewers with the marinade and let them marinate for at least 30 minutes.
  6. Grill the skewers, turning occasionally and basting with more marinade, until the vegetables are tender and slightly charred, about 10 minutes.
  7. Serve hot with extra marinade sauce for dipping.
