Coconut & Mango Chia Pudding

Method

In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, and vanilla extract. Stir well until the mixture is fully combined.
Cover the bowl and refrigerate for at least 4 hours, or overnight, until the chia seeds have absorbed the liquid and the mixture has a pudding-like consistency.
Remove the pudding from the refrigerator and give it a good stir to break up any clumps.
Layer the chia pudding with diced mango in serving glasses or bowls.
Garnish with shredded coconut and serve immediately or keep refrigerated until ready to serve.
