In a mixing bowl, combine masa harina, water, and salt to form a dough.
Divide the dough into 8 equal portions and shape each into a ball.
Press each ball into a thick disk shape using your hands.
Heat oil in a pan over medium-high heat and cook each sope for about 2-3 minutes on each side, until golden brown.
Spread vegan refried beans on top of each sope, followed by lettuce, salsa, and vegan cheese if using.
