Steam the sweet potato until tender, then mash it in a large bowl.
In a pan, heat the sesame oil and sauté the shiitake mushrooms with soy sauce and ginger until cooked.
Combine the mushrooms with mashed sweet potato, green onions, salt, and pepper in the bowl.
Take each dumpling wrapper and place a tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold in half, and press to seal.
Heat vegetable oil in a pan over medium heat. Fry the dumplings in batches until golden brown, about 2-3 minutes on each side.
