Vegan Eritrean Shiro Wat

Method

Heat olive oil in a large pot over medium heat.

Add onions and cook until transparent.

Add garlic and cook for another minute until fragrant.

Stir in the berbere spice mix, coating the onions and garlic.

Add the shiro powder and mix thoroughly.

Cook on low heat for 30-40 minutes, stirring frequently to prevent sticking.

Adjust the thickness by adding water if necessary. Season with salt.

Serve hot with Injera or rice.
