A delightful twist on traditional Sambusa, this Vegan Lentil Sambusa Pie is filled with aromatic lentils and spices, wrapped in a flaky pastry.

Preheat the oven to 375°F (190°C).
Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until soft.
Stir in the cumin, coriander, and cardamom. Cook for 1 minute until fragrant.
Add the red lentils and vegetable broth. Bring to a boil, then lower the heat and simmer for 20-25 minutes, or until the lentils are tender. Season with salt and pepper.
Roll out the puff pastry and place it in a pie dish.
Bake for 35-40 minutes, or until the pastry is golden and crisp.
Let it cool for a few minutes before slicing and serving.
