Preheat the oven to 180°C (350°F, gas mark 4).
In a large pan, cook the lentils in vegetable stock for 15 minutes, then drain.
In a separate pan, sauté onion, garlic, carrot, and celery until soft.
In a large bowl, combine the cooked lentils, sautéed vegetables, mixed nuts, breadcrumbs, tomato paste, soy sauce, thyme, rosemary, salt, and pepper.
Press the mixture into a greased loaf tin.
Let it cool slightly before turning out of the tin. Serve warm.
