A plant-based twist on the classic, these Vegan Scotch Eggs feature a savory chickpea and vegetable mix surrounding a tender mock egg center, all wrapped in crispy breadcrumbs.

Mash chickpeas in a bowl until mostly smooth.
Mix in the vegetables, nutritional yeast, paprika, salt, and pepper.
Divide the chickpea mixture into four equal parts and flatten into discs.
Place a vegan egg in the center of each disc and mold the chickpea mixture around it to encase it completely.
Prepare a breading station with separate bowls for the flour, plant milk, and breadcrumbs.
Heat oil in a pan and fry the scotch eggs until golden brown and crispy.
Drain on paper towels and serve warm.
