Method

In a large pot, heat the oil over medium heat and sauté the onion, garlic, and ginger until soft.
Add the cumin, coriander, and cayenne pepper, stirring until fragrant.
Pour in the vegetable broth and diced tomatoes, bringing to a simmer.
Stir in the peanut butter until well combined, then add the sweet potatoes and cook until tender, about 30 minutes.
Add the kale, cooking until wilted, and season with salt and pepper.
