    Recipe Description

    A light and vibrant salad with soba noodles, crisp vegetables, and a tangy dressing, perfect for a summer meal.

    Ingredients

    • 1 cup shredded carrots
    • 1 cucumber, julienned
    • 1 red bell pepper, julienned
    • 1/4 cup chopped green onions
    • 3 tbsp soy sauce
    • 2 tbsp rice vinegar
    • 1 tbsp sesame oil
    • 1 tsp grated ginger
    • 1 tbsp sesame seeds

    Steps:

    1. Cook soba noodles according to package instructions, then rinse under cold water and drain.
    2. In a large bowl, combine the soba noodles with shredded carrots, cucumber, bell pepper, and green onions.
    3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and grated ginger.
    4. Pour the dressing over the noodle mixture and toss to combine.
    5. Sprinkle with sesame seeds and serve with lime wedges.
