These smoky vegan stuffed mushrooms are the perfect appetizer for any celebration. Packed with a mouth-watering mixture of vegan cheese, spinach, and a hint of liquid smoke, they’re guaranteed to impress!
Ingredients
- 1 cup chopped spinach
- 1/2 cup vegan cream cheese
- 1/4 cup chopped walnuts
- 1 tablespoon nutritional yeast
- 1 teaspoon liquid smoke
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Steps:
- Preheat the oven to 375°F (190°C) and lightly grease a baking sheet.
- Remove stems from mushrooms and finely chop them. Set the caps aside.
- Heat olive oil in a pan over medium heat and sauté chopped stems and garlic until soft.
- In a bowl, mix the sautéed stems and garlic with spinach, vegan cream cheese, walnuts, nutritional yeast, liquid smoke, salt, and pepper.
- Stuff each mushroom cap with the mixture and place on the prepared baking sheet.
- Serve warm and enjoy.
