Recipe Description

These smoky vegan stuffed mushrooms are the perfect appetizer for any celebration. Packed with a mouth-watering mixture of vegan cheese, spinach, and a hint of liquid smoke, they’re guaranteed to impress!

Ingredients

  • 24 large cremini mushrooms
  • 1 cup chopped spinach
  • 1/2 cup vegan cream cheese
  • 1/4 cup chopped walnuts
  • 1 tablespoon nutritional yeast
  • 1 teaspoon liquid smoke
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Steps:

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Remove stems from mushrooms and finely chop them. Set the caps aside.
  3. Heat olive oil in a pan over medium heat and sauté chopped stems and garlic until soft.
  4. In a bowl, mix the sautéed stems and garlic with spinach, vegan cream cheese, walnuts, nutritional yeast, liquid smoke, salt, and pepper.
  5. Stuff each mushroom cap with the mixture and place on the prepared baking sheet.
  6. Serve warm and enjoy.
