Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 1 zucchini, diced
- 1/2 cup okra, sliced
- 1 cup long-grain white rice
- 1 can diced tomatoes
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 2 cups vegetable broth
- 1 cup cooked black beans
- Salt and pepper to taste
- Green onions and parsley for garnish
Steps:
- Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, celery, zucchini, and okra. Cook, stirring occasionally, until the vegetables are softened, about 10 minutes.
- Stir in the rice, diced tomatoes, Cajun seasoning, and smoked paprika until well combined.
- Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
- Stir in the black beans and cook for an additional 5 minutes, or until heated through.
- Season with salt and pepper to taste. Serve garnished with sliced green onions and parsley.
