Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 1 zucchini, diced
  • 1/2 cup okra, sliced
  • 1 cup long-grain white rice
  • 1 can diced tomatoes
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 2 cups vegetable broth
  • 1 cup cooked black beans
  • Salt and pepper to taste
  • Green onions and parsley for garnish

Steps:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, celery, zucchini, and okra. Cook, stirring occasionally, until the vegetables are softened, about 10 minutes.
  2. Stir in the rice, diced tomatoes, Cajun seasoning, and smoked paprika until well combined.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
  4. Stir in the black beans and cook for an additional 5 minutes, or until heated through.
  5. Season with salt and pepper to taste. Serve garnished with sliced green onions and parsley.
