Ingredients
- 1 cup cashews, soaked and drained
- 1/2 cup water
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1 garlic clove
- 1/2 teaspoon salt
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup fresh spinach, chopped
- 1/2 red onion, thinly sliced
Steps:
- Preheat oven according to pizza crust package instructions.
- In a blender, combine soaked cashews, water, nutritional yeast, lemon juice, garlic clove, and salt. Blend until smooth to create the cashew cream.
- In a mixing bowl, combine the cashew cream with chopped artichoke hearts and spinach. Mix until fully incorporated.
- Spread the spinach-artichoke mixture evenly over the pizza crust, leaving a small border around the edges.
- Top with thinly sliced red onion and black olives.
- Let cool for a couple of minutes before slicing and serving.
