Ingredients

  • 1 pre-made vegan pizza crust
  • 1 cup cashews, soaked and drained
  • 1/2 cup water
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup fresh spinach, chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup black olives, sliced

Steps:

  1. Preheat oven according to pizza crust package instructions.
  2. In a blender, combine soaked cashews, water, nutritional yeast, lemon juice, garlic clove, and salt. Blend until smooth to create the cashew cream.
  3. In a mixing bowl, combine the cashew cream with chopped artichoke hearts and spinach. Mix until fully incorporated.
  4. Spread the spinach-artichoke mixture evenly over the pizza crust, leaving a small border around the edges.
