- 2 1/2 cups warm water
- 1 teaspoon salt
- 1 tablespoon oil
- 1 ripe plantain, sliced and caramelized
- 1 cup cooked black beans
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon smoked paprika
Steps:
- Mix cornmeal, water, and salt in a bowl until a sticky dough forms. Allow to rest for 5 minutes.
- Divide dough into 12 small balls, flatten each to about 1/2-inch thickness.
- Cook in a hot skillet with oil until each side is golden brown, approximately 6 minutes per side.
- Sauté onion and garlic until golden, add black beans and paprika, cook for 5 minutes.
- Serve arepas opened with a spoonful of caramelized plantain and a scoop of black bean mix.
