Ingredients

  • 2 cups pre-cooked white cornmeal
  • 2 1/2 cups warm water
  • 1 teaspoon salt
  • 1 tablespoon oil
  • 1 ripe plantain, sliced and caramelized
  • 1 cup cooked black beans
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon smoked paprika

Steps:

  1. Mix cornmeal, water, and salt in a bowl until a sticky dough forms. Allow to rest for 5 minutes.
  2. Divide dough into 12 small balls, flatten each to about 1/2-inch thickness.
  3. Cook in a hot skillet with oil until each side is golden brown, approximately 6 minutes per side.
  4. Sauté onion and garlic until golden, add black beans and paprika, cook for 5 minutes.
  5. Serve arepas opened with a spoonful of caramelized plantain and a scoop of black bean mix.
