Delightful vegan dumplings filled with sweet potato and shiitake mushrooms, perfect for a comforting meal or a festive gathering.
Ingredients
- 1 large sweet potato, peeled and diced
- 1 cup shiitake mushrooms, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 2 green onions, finely chopped
- Salt and pepper to taste
- Water for sealing dumplings
- Vegetable oil for frying
Steps:
- Steam the sweet potato until tender, then mash it in a large bowl.
- In a pan, heat the sesame oil and sauté the shiitake mushrooms with soy sauce and ginger until cooked.
- Combine the mushrooms with mashed sweet potato, green onions, salt, and pepper in the bowl.
- Take each dumpling wrapper and place a tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold in half, and press to seal.
- Heat vegetable oil in a pan over medium heat. Fry the dumplings in batches until golden brown, about 2-3 minutes on each side.
