Recipe Description

Delightful vegan dumplings filled with sweet potato and shiitake mushrooms, perfect for a comforting meal or a festive gathering.

Ingredients

  • 30 dumpling wrappers
  • 1 large sweet potato, peeled and diced
  • 1 cup shiitake mushrooms, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • Water for sealing dumplings
  • Vegetable oil for frying

Steps:

  1. Steam the sweet potato until tender, then mash it in a large bowl.
  2. In a pan, heat the sesame oil and sauté the shiitake mushrooms with soy sauce and ginger until cooked.
  3. Combine the mushrooms with mashed sweet potato, green onions, salt, and pepper in the bowl.
  4. Take each dumpling wrapper and place a tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold in half, and press to seal.
  5. Heat vegetable oil in a pan over medium heat. Fry the dumplings in batches until golden brown, about 2-3 minutes on each side.
