Ingredients

  • 2 large sweet potatoes, peeled and sliced
  • 1 tablespoon olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 4 vegan pita breads
  • 1 cup hummus
  • 1 small red onion, thinly sliced
  • 1 cup chopped lettuce
  • 1/2 cup diced tomatoes
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice

Steps:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato slices with olive oil, cumin, smoked paprika, cinnamon, cayenne, and salt until evenly coated.
  3. Spread the sweet potato slices on the prepared baking sheet in a single layer. Roast for 20-25 minutes, turning halfway through, until tender and lightly browned.
  4. Warm the pita breads in the oven during the last few minutes of cooking.
  5. Spread hummus on each pita, then top with roasted sweet potato, red onion, lettuce, and tomatoes.
