Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 cup butternut squash, cubed
- 1 cup fresh or frozen corn kernels
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Steps:
- Heat oil in a large pot over medium heat.
- Add onion and garlic, cook until translucent.
- Add bell pepper and squash, cook for about 5 minutes.
- Stir in the corn, beans, tomatoes, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for about 20 minutes or until the vegetables are tender.
- Serve hot, garnished with fresh cilantro.
