    Recipe Description

    This heartwarming Three Sisters Stew combines the traditional Native American trio of corn, beans, and squash into a nourishing and flavorful dish. Each ingredient complements the others, with beans providing protein, corn adding sweetness, and squash offering a silky texture. This stew celebrates these main crops, known as the sisters, which are staple foods that have been grown together for centuries. It’s not only deeply satisfying but also imbues a sense of connection to the land and its history.

    Ingredients

    • 1 onion, chopped
    • 2 garlic cloves, minced
    • 1 bell pepper, diced
    • 1 cup butternut squash, cubed
    • 1 cup fresh or frozen corn kernels
    • 1 can (15 oz) black beans, rinsed and drained
    • 1 can (15 oz) diced tomatoes
    • 4 cups vegetable broth
    • 1 tsp cumin

    Steps:

    1. Heat oil in a large pot over medium heat.
    2. Add onion and garlic, cook until translucent.
    3. Add bell pepper and squash, cook for about 5 minutes.
    4. Stir in the corn, beans, tomatoes, and vegetable broth. Bring to a boil.
    5. Reduce heat and simmer for about 20 minutes or until the vegetables are tender.
    6. Serve hot, garnished with fresh cilantro.
