    Ingredients

    • 1 cup almond flour
    • 1/4 cup coconut oil
    • 2 tablespoons maple syrup
    • 1 cup canned coconut milk
    • 1/2 cup fresh lemon juice
    • 2 tablespoons lemon zest
    • 1/2 cup tapioca flour
    • 3/4 cup granulated sugar
    • Powdered sugar for dusting

    Steps:

    1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
    2. Mix almond flour, coconut oil, and maple syrup in a bowl. Press into the bottom of the prepared pan.
    3. Bake crust for 10 minutes. Remove from oven and cool slightly.
    4. Whisk together coconut milk, lemon juice, lemon zest, tapioca flour, and granulated sugar. Pour over the crust.
    5. Bake for 30 minutes, until filling is set.
    6. Dust with powdered sugar before serving.
