    Recipe Description

    Savor the delectable taste of West Africa with these vegan Accra bean fritters. Made from black-eyed peas seasoned with vibrant herbs and spices, these fritters are crispy on the outside and tender on the inside. They are perfect for sharing at gatherings or as a tasty snack any time of the day. Not only are they utterly delicious, but they are also packed with protein and fiber, making them a nutritious option for your vegan diet.

    Ingredients

    • 2 cups black-eyed peas, soaked overnight and skins removed
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 scotch bonnet pepper, deseeded and minced (optional)
    • 1/2 teaspoon thyme
    • 1/2 cup finely chopped scallions
    • Salt to taste
    • Vegetable oil for frying

    Steps:

    1. Blend the soaked black-eyed peas, onion, garlic, scotch bonnet (if using), and thyme into a smooth paste.
    2. Transfer the paste to a bowl, add the chopped scallions and salt, and mix thoroughly.
    3. Heat oil in a deep skillet or fryer to 350°F (175°C).
    4. Spoon the bean mixture into the oil using a tablespoon, frying in batches until the fritters are golden and crisp, about 5-7 minutes.
    5. Drain on paper towels and serve hot.
