Ingredients
- 2 cups black-eyed peas, soaked overnight and skins removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, deseeded and minced (optional)
- 1/2 teaspoon thyme
- 1/2 cup finely chopped scallions
- Salt to taste
- Vegetable oil for frying
Steps:
- Blend the soaked black-eyed peas, onion, garlic, scotch bonnet (if using), and thyme into a smooth paste.
- Transfer the paste to a bowl, add the chopped scallions and salt, and mix thoroughly.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Spoon the bean mixture into the oil using a tablespoon, frying in batches until the fritters are golden and crisp, about 5-7 minutes.
- Drain on paper towels and serve hot.
