Ingredients

  • 2 cups black-eyed peas, soaked overnight and skins removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, deseeded and minced (optional)
  • 1/2 teaspoon thyme
  • 1/2 cup finely chopped scallions
  • Salt to taste
  • Vegetable oil for frying

Steps:

  1. Blend the soaked black-eyed peas, onion, garlic, scotch bonnet (if using), and thyme into a smooth paste.
  2. Transfer the paste to a bowl, add the chopped scallions and salt, and mix thoroughly.
