Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup vegan butter
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup almond milk
  • 1 cup vegan dulce de leche
  • 1/2 cup coconut flakes

Steps:

  1. Preheat the oven to 350°F.
  2. Cream together vegan butter and sugar until light and fluffy.
  3. Add vanilla extract and almond milk, mix well.
  4. Gradually add flour, forming a soft dough.
  5. Roll the dough on a floured surface and cut into circles.
  6. Let cool, then sandwich two cookies with vegan dulcaremix de leche.
  7. Roll the edges in coconut flakes.
