Ingredients
- 2 cups marinara sauce
- 1 cup cashews, soaked
- 2 tbsp lemon juice
- 3 tbsp nutritional yeast
- 1 clove garlic
- Salt to taste
- Pepper to taste
- 1 tbsp basil, chopped
- 1 tbsp olive oil
Steps:
- Preheat oven to 375°F (190°C).
- Cook ziti pasta according to package instructions. Drain and set aside.
- In a blender, combine soaked cashews, lemon juice, nutritional yeast, garlic, salt, and pepper. Blend until smooth, creating vegan ricotta.
- In a large bowl, mix cooked ziti, marinara sauce, and half of the vegan ricotta.
- Transfer the mixture to a baking dish. Dollop remaining ricotta on top and drizzle with olive oil.
- Garnish with chopped basil before serving.
