Recipe Description

Crispy on the outside, gooey on the inside, these vegan bitterballen are filled with a savory mushroom and onion mixture, encased in crunchy breadcrumbs.

Ingredients

  • 2 tbsp vegan butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, finely chopped
  • 2 tbsp soy sauce
  • 1/4 cup flour
  • 1 cup vegetable broth
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Oil for frying

Steps:

  1. Melt vegan butter in a pan and sauté onion and garlic until soft. Add mushrooms and soy sauce, cook until mushrooms are soft.
  2. Stir in flour to form a roux, then gradually add vegetable broth to make a thick mixture. Season with salt and pepper, then chill until firm.
  3. Form mixture into balls, roll in breadcrumbs, and deep-fry until golden brown.
