A sumptuous, moist chocolate cake layered with rich cherry filling and topped with whipped coconut cream and dark chocolate shavings, making for a perfect vegan adaptation of the classic Black Forest Cake.
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup cocoa powder
- 2 tsp baking soda
- 1 tsp salt
- 2 cups non-dairy milk
- 2/3 cup vegetable oil
- 2 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 cup cherry jam
- 2 cups fresh cherries, pitted and halved
- 3 cups whipped coconut cream
- 1/2 cup dark chocolate shavings
Steps:
- Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
- Add non-dairy milk, vegetable oil, apple cider vinegar, and vanilla extract, and mix until smooth.
- Divide batter evenly between prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool completely before assembling.
- Place second cake layer on top and cover with remaining whipped coconut cream.
- Decorate with fresh cherries and dark chocolate shavings.
- Chill for at least an hour before serving.
