    Recipe Description

    A creamy, comforting vegan carbonara that doesn’t compromise on flavor. Made with silken tofu for the carbonara sauce and crispy smoked mushrooms as a bacon substitute, this dish is perfect for a cozy night in.

    Ingredients

    • 400g spaghetti
    • 200g silken tofu
    • 2 tablespoons nutritional yeast
    • 1 teaspoon turmeric
    • 100g smoked mushrooms
    • 2 cloves garlic
    • Salt and pepper to taste
    • Parsley for garnish

    Steps:

    1. Cook the spaghetti according to package instructions.
    2. Blend silken tofu, nutritional yeast, turmeric, salt, and pepper until smooth to make the sauce.
    3. Fry the smoked mushrooms and garlic until crispy.
    4. Toss the cooked spaghetti with the sauce and smoked mushrooms.
    5. Garnish with parsley and serve immediately.
